Cookies are the greatest ever invention to portion the amount of dessert you eat! Many of my cookie recipes were passed down to me from my mother. She would bake all her specialties at Christmas and give each of us a tin containing some of every variety. They are all so good that I could never pick a favorite.
It wouldn't be holiday baking without a cookie jar full of Gingerbread Cut-Out Cookies. My recipe is a genuine classic and includes directions to safely handle egg whites when making Royal Icing. You can use Christmas cut-outs like stars and angels and the cookies won't spread or lose shape. Try my holiday twist on oatmeal cookies using all your favorite spices plus apple flavoring, brown sugar, and molasses. The cookies are simple to make and will be a favorite of children of all ages.

The combination of mint and chocolate never fails to please, at least not in my house. My Andes Mint Cookies 2 Ways can be made with whole Andes Mints sandwiched between cookie layers or chopped and folded into the batter. Mint Truffle Cookies (pictured) combine Andes Mints with an intensely chocolate batter. Roll the cookies in powdered sugar before baking and you add a special touch to set these treats apart.
